1. Classic 10K

    First major race of the season, unless you’re counting the Orange County Choppers race I did in March. But The Classic is HUGE. I don’t expect to place in this race, 5K yes, but 10K, no. I’m just always damn proud of myself for pushing it on this hilly course every year!

    I did 30 seconds above my 10K PR of 50:30 with a solid 51:00 minutes. It was tough today! The heat kicked in around mile 5 and the hills didn’t help at all. But considering I knew my body wasn’t entirely ready to complete a new PR today, I’m very proud of my accomplishment. 

    Time to kick it into gear! Summer race season is now in full swing with 3 more races the remaining weekends of June for me. And after next week’s 5K starts marathon training (bum bum bum!). 

    Time to party it up for my graduation though! Grad parties are such a weird thing. I’m proud that I finished four years of liberal arts college, but I’m not one to throughly enjoy being fawned over constantly. I’m a humble lady.

Muffin Top-Less Peanut Butter Protein Cookies
1 Cup Natural PB (could sub almond butter, I used crunchy)
1.5 Scoops Vanilla Whey Protein Powder (I used Isoflex for this recipe)
1 Whole Cage-Free Egg
1 teaspoon Vanilla Extract
1/2 Cup Sugar Substitute (I used Stevia)
1/2 teaspoon Vanilla Creme Liquid Stevia
1 Tablespoon Water
Mix the wet ingredients first, then add the peanut butter. Once it’s combined, slowly add in the protein powder. Pre-heat oven to 350. Spray a baking pan with Pam or other non-stick spray. Seperate dough into 12 cookies spaced evenly on the sheet and use a fork to press them down. I sprayed the back of the fork with Pam to avoid sticking. Bake for 9-11 minutes.I am a peanut butter LOVER. And of course having a crazy-strong sweet tooth, I love cookies too! I baked these peanut butter protein cookies earlier this morning! They’re only 80 calories, sugar free and have only a few ingredients!   3. OKAY so,

    I graduated liberal arts college!

    On May 20th, I received my Bachelor’s Degree in Public Relations/Communications. Such a huge achievement it hasn’t even set in yet. Like, I’m DONE with college. Four years. Done. I feel like I’m on summer break and I’ll just get back into the groove of things when the new semester starts up in August, but alas, that’s not the case. I’m in the real world now, faced with the ominous task of getting an actual job.

    Sure I have Pier 1 where I’m a sales leader for the time being, but I absolutely dread getting sucked into that world of retail with no escape where it will be a year out from graduation and I suddenly realize “oh, I need to find a real job.” 

    I’ve been thankful for the great internships I’ve taken though in my educational career. One of my old supervisors wants me to work for her part-time as an assistant, which is fantastic because I love the floral work she does in the wedding industry. And just today I was officially offered a full-time position where I just finished interning- The Woodstock Film Festival. I would be a press assistant and intern coordinator. So, so grateful for these connections. I’m almost sure I’m going to take the Woodstock job, but my only hook-up is the distance. Hopefully either I can find a cheap-ass apartment closer or they offer the upstairs apartment to me for the summer.

    In a very de-stressed nutshell, that’s my college/job world as of late. I’m not going to ramble for too long, but I already feel good just typing this stuff out, so imma continue. :)

    Now personally… ugh, things are a different story.

    And I had written a long thing about my feelings on my current relationship, but I’m not sure I want to fully talk about it yet. Just that things are changing, people are changing, feelings are changing. You know, all that fun stuff that completely consumes your thought.
